INGREDIENTS :
• 3 big russet potatoe (old)
• oil, for frying
• salt (as per taste)
• ketchup ( serve with French fries)
EQUIPMENTS:
• chopping board , for cutting potatoes
• a chef knife
• peeler
• cooking pot for boiling water
• 2 napkins or kitchen clothes
• a skimmer
• cooking pot or pan for frying potatoes
• a serving plate
PREPARATION METHOD :
1. Before start the cooking process wash the potatoes , take 3 big russet potatoes and peel them nicely and wash them.

3. Add water into the cooking pot and place the pot over a flame and rest the water for boiling. when bubbles comes out from water then add all the cutting potatoes into boiled water.and the flame should be medium.and rest it for 5 minutes.

4. Don't boiled it too much, after minutes press them a little with your nails to check if they turned soft,then turn off the flame
5. Strain the boiled potatoes with a strainer, and discard all the water
6. Now spread them over a napkin or kitchen clothes and dry them and wipe them thoroughly with the cloth.
7. After wipe them place the boiled potatoes in a plate,and leave it for 2 - 3 hours in a fridge until they become cold and set.
Or, you can put them into a zip lock bag and seal it .and leave it in a fridge for 3 - 4 hours
8. After 3- 4 hours take the potatoes out of the fridge now take a cooking pot or a pan .and add oil into the pan ,and place the pan over a flame and leave the oil for becoming hot.
9. After few minutes when oil becoming hot ,then drop the French fries into the oil for deep frying.place as many fries as possible in the pan at one time , fry them on high flame till they get little brown colour.
10. After they becoming little brown colour, drain out french fries or strain the French fries with a skimmer.

11. And then place the French fries in a plate and let the French fries for cool down under a fan for 15- 20 minutes
12. After 15-20 minute again drop the French fries in the oil for deep frying, drop as many as possible in the pan at one time and fry them till they get golden brown colour. And keep the flame high.
After they becoming golden brown colour drain out the French fries or strain the French fries with skimmer and place the French fries in a plate.

13. Our crispy french fries is ready . If you like chaat masal then sprinkle some chaat masala over the French fries and mix well.
IMPORTANT NOTES ABOUT FRENCH FRIES :
Making french fries is really easy just keep note of little things.
• always take non starchy potatoes , basically old potatoes.
• while deep frying the French fries make sure that the oil is well heated and the flame kept high as well.
• first Deep fry the French fries for a while till they becoming a little brown colour and then drain out them and keep them under a fan for cooling down.
• after this ,fry them again in hot oil till they becoming golden brown colour not black .
If you continue this process you will be able to make a perfect french fries. Receive it with tomato ketchup with burger ,pizza etc.
