Hello friends welcome to another knowledgeable post. Today we will learn about stock , 4 basic cooking stock. And how to make stock that we use in cooking.and basic ingredients for making a stock. and uses of stock.

Definition of stock - 

stock is a flavour full liquid . it is made from meat and meat bones,fish and fish bones. We use it in kitchen for making soup , stew, sauces, and many more dishes. Stock gives or enhance the flavour of dish.

Types of stock -There are 4  types of  basic stock. We use use different types of stock for different types of dishes. chick stock are used for non veg. Dishes, and vegetables stock are used for vegetarian dishes.

Personally i love stock. Stock gives a magical flavour or taste to the food that's why people love or use it for making soup, sauce,stews, and pluao,fried rice and many more dishes, 


Types of stock -

Basically there are 4 types of stock.

1. White stock.

2. Brown stock.

3. Fish stock.

4. Vegetable stock.

So these is the 4 basic cooking stock. That we use in cooking, and today we will learn how to make different types of stock,and their recipe and their ingredients with full preparation method.

WHITE STOCK : 

Basic cooking stock,how to make white cooking stock
white stock

White stock made from veal or chicken bones and herbs and vegetables. We use it for making cream soup and sauce.

Ingredients:

• chicken or veal bones

• carrots

• onion

• leek

• celery

• parsley

• bay leaf

• thyme

• pepper corn

• clove


Before making this stock we also need  a cutting board,a laddle, a strainer,a chef knife,a large pot, a skimmer.

Preparation method: 

Follow these steps to make easily a white stock.

first before start the cooking process you  should peel and wash the vegetables. First step is cut the chicken into small pieces and then place the meat into a pot and covered with cold water and place the pot over a strong flame . 

Finely cut all the vegetables so that they give up as much as flavour in to the stock and leave the herbs and spices whole.

After some time when water is boiled then add all the ingredients and low the flame so that stock continue to lightly bobbling.

Leave to cook for around  40 minutes

Once it cooked place the pot from heat and then strain the solid ingredients and filter the stock from solid ingredients.

And our white stock is ready. If you want to store it do not leave it in room temperature, if want to store for few days then store it in a refrigerator.

So these is how you can make white stock.


BROWN STOCK :

In this post you will learn how to make brown stock from poultry. You can use this stock to give more flavour to a dish , brown stock have strong flavour more than white stock. Follow this step to make easily brown stock.

Ingredients:

• raw chicken

• carrots

• onion

• parsley

• bay leaf

• garlic

• thyme

And you also need a chopping board,a chef knife, cooking pot, strainer, a laddle,a skimmer,some water,two container,a spatula.

preparation method :

Before you start the cooking process you have to peel and wash all the vegetables

First you should cut chicken into large pieces, place the chicken into a baking tray and place the tray into oven and rest it for 14 minutes ,at 200 °C and check the chicken pieces in every 10 minutes and turn over . Chicken pieces colour should be brown not black.

Chopped the carrots and onions and and then crash the garlic and add all ingredients with that chicken pieces.

Then again put into oven that tray for 10 minutes at 200°c 

After 10 minutes place that tray from oven ,and put the vegetables and chicken in a cooking pot and add the herbs and spices then covered with water .

Place the cooking pot on flame and the flame should be low. And simmer for one hour and 30 min.

Once cooking is done , filter the stock and discard the solid ingredients or strain the solid ingredients.

Then our brown stock is ready

If You can store it don't matter leave it in room temperature, if you want to store then store it in a refrigerator.

So, in this process you can make brown stock so easily.


FISH STOCK :

How to make Fish stock, 4 basic cooking stock
Fish stock

Today in this post we will learn how to make a fish stock.

Ingredients:

• fish bones

• onion

• butter

• thyme

• white wine 

• bay leaf

• pepper corn

• parsley

• lemon

• boiling water

• garlic

• leek

• carrots

You also need, a chopping board,a chef knife, cooking pot, strainer,a laddle, skimmer, water, container, a spatula.

prepatprepa method :

Before making this stock peel and wash all the vegetables.

First step, cut the fish and fish bones into large pieces.and then chopped the carrots and onions

Then in a cooking pot add butter and leave it for melting after melt add carrots and onions into the melted butter and  turnover them for 5 - 6 minutes, 

Then add fish bones and cook it for 5 - 6 minutes and be careful its should not be burned ,after 6 minutes add oil into it, and add water ,the water quantity should be the height of bones.then add bouquet garni, pepper corns and then cover it with a lid for 25 minutes.

After 25 - 30 minutes turn of the flame and place the pot from heat and rest it until its become cool.

After few minutes discard the solid ingredients from stock or filter the stock from solid ingredients.

In this process you can make fish stock so easily if you want store it don't leave it in a room temperature, store it on a refrigerator.you can use fish stock into sauces or veloute, soups. 


VEGETABLE STOCK :

How to make vegetable stock, 4 basic cooking stock
vegetable stock

In this post we will learn how to make vegetable stock. Vegetable stock is a most important ingredient or most common ingredients in cooking.we can use vegetable stock for stew, sauces, soups ,pulao etc.

Ingredients: 

• celery 

• carrots

• onion

• bay leaf

• garlic 

• clove

• pepper corns

Before start the cooking process you should peel and wash the all vegetables.in this post i will teach you how to make vegetable stock ,so follow my steps to make vegetable stock.

Preparation method:

First you should cut the vegetables , don't chopped or cut them into fine pieces. Cut them into large pieces ,cut the vegetables roughly. 

First cut the onion and then cut the carrots and celery ,and crash the garlic . So these are the basic vegetables that you can add in vegetable stock ,you could also add cabbage and cauliflower . Its gives a nice flavour into the stock ,its not compulsory if you want to add then you can add

Second step is add water into cooking pot and placed the pot over a flame and let it for boiling.

After  boiling, add bay leaf ,clove , and black pepper and crashed garlic in to the boiled water.and then add all cuts vegetables into the boiled water and let them for 20 minutes

After 20 minutes placed the cooking pot from heat and then strain the vegetable stock and filter the solid ingredients from liquid items.

Then ready our vegetable stock ,so in this process you can make vegetable stock so easily .so these are the basic recipe for vegetable stock , everybody has their own variation each recipe.

You can use vegetable stock for making soup , stew , sauces, pulao,fried rice etc.
